Oven Roasted Red Peppers

Serves:  5 roasted peppers
Prep Time: 15 min
Cooking Time: 15-20 min
Total: 35 min

Ingredients
5 red bell peppers

Directions
  1. Set oven to broil and let it preheat.
  2. Wash red peppers and slice the tops.  Remove the seeds and the inner ribs and slice in half.
  3. Arrange peppers on a parchment paper lined baking sheet, with the skin side facing upward.
  4. Broil for 15-20 minutes.  As the peppers broil, the skins will start to blister and turn black.
  5. Remove peppers from oven and transfer them into a medium size bowl or a ziplock bag. Cover bowl with a plate or seal ziplock bag to allow peppers to steam for 15 minutes.
  6. After the peppers have steamed, peel off the skin.
  7. Use in salads, as sandwich or pizza toppings, or in sauces.
