French Toast and Fruit Kebabs


Serve up these fun and healthy French toast and fruit kebabs for a special breakfast or brunch.

Serves: 4 skewers

Ingredients
4 slices bread or 2 pitas
2 eggs
2-3 tbsp. milk or substitute
1 tsp. butter or margarine
various pieces of fresh cut fruit
-berries (strawberries, raspberries, blueberries)
-grapes
-cherries
-melon (watermelon, honeydew, cantaloupe)
-tropical (pineapple, kiwi, mango, banana)
-apple
-pear
-plum
-peach, nectarine or apricot
-orange
cinnamon sugar, maple syrup or fruit yogurt, to garnish

Directions
  1. In a shallow bowl, whisk together eggs and milk. Dip bread into the egg mixture and allow it to soak.
  2. Melt butter in a large frying pan over low-medium heat. Transfer egg-soaked bread to the pan and fry for 1-2 minutes. Flip and repeat until the other side is lightly browned.
  3. Cut bread into strips or squares and thread onto wooden skewers, alternating between various fresh cut fruit.
  4. Serve immediately sprinkled with cinnamon sugar, drizzled with maple syrup, or with a yogurt dipping sauce.
